How to deal with overdue tasks in the absence of the task owner?

In Zoho, activities can only be owned by a named user, not by a group or a team of users. There is no such thing as a 'pool of tasks' waiting to be picked up by a group of people. As a consequence, it is the team's responsibility to stand up 'as a team' and find a way to take ownrship of activities that are at risk of being overlooked in the absence of a team member.
